Sunday: Spinach Stuffed Chicken Breasts

Ingredients: ½ c sour cream, 10 oz spinach, ½ c pepperjack cheese, 4 cloves garlic, 4 chicken breasts, 1/4 tsp ground black pepper, 8 oz bacon

  1. Preheat oven to 375.
  2. Place spinach in a large bowl, and microwave for 2 minutes or until thawed.
  3. Stir in sour cream, pepperjack cheese, and garlic.
  4. Butterfly the chicken breasts.
  5. Spoon some of the spinach mixture into each one.
  6. Roll up chicken to enclose the spinach.
  7. Wrap each chicken breast with two slices of bacon.
  8. Secure with toothpicks, and arrange in a shallow baking dish.
  9. Bake uncovered for 35 minutes
  10.  Increase heat to 500 or use the oven’s broiler to cook for an additional 5 to 10 minutes to brown the bacon.
  11.  Enjoy!
